This recipe is baked to make pasta with bacon, in a creamy, simple sauce, making it the easiest sauce ever. Add the bacon, the fat of the guanciale, the olive oil, salt, pepper, garlic powder and salt and, using a wooden spoon or tongs, put it back into the pasta water and mix to emulsify the sauce. The use of eggs is essential for a true carbonara recipe, and you must add the remaining water from the pasta while it is cooking, which is an important step for the success of the carbonaras. I also mention that adding leftovers of water and pasta helps to prevent eggs from making a scrambled egg. If you want to achieve the perfect pasta carbonara, pancetta is the protein of choice, but if you have more ingredients at hand, try a combination of guanciale, tomato, mozzarella and a little salt and pepper. Many people use it because it is easier to find pancakes in the market, and there are often tomatoes and mozzarella. It should be prepared with a good amount of olive oil, garlic, basil, salt, pepper and garlic powder. There is much debate about whether it is fat or meat, but many people still use pancakes, although there is no evidence that it was a hypercaloric ingredient. Sources: 1, 6, 8, 13

Traditionally, carbonara also contains cured pork, but even if you’re into cheese, you should use a good amount of mozzarella, mozzarella cheese and a little salt and pepper. Sources: 1, 6

If you are not able to buy the typical “Italian” products, you can choose a variant with bacon, Parmigiano – Reggiano, which is easier to obtain than pecorino. There is no doubt that Parmigianos and Reggiano are variations on the more classic carbonara pasta, but they can certainly be used in a carbonara recipe. Sources: 6, 9

Add the cooked spaghetti, bacon and basil to the pan and toss well to combine with the carbonara and finish. Don’t forget the pasta and carbonara when you add them to pork, bacon, eggs and cheese. Sources: 3, 10

Put the drained and steamed noodles with the eggs and a little pasta water in the bowl and toss well to cook the egg and coat lightly. While the pasta is cooking, beat 3 eggs in a small bowl and add the Parmesan cheese and mix until well mixed. Add the mixture of bacon, onion and garlic to the drained pasta and toss well by adding more olive oil and pasta or water when it seems dry. Trip consists of placing the eggs, cream and cheese in a large bowl and then adding the hot pasta, bacon and chicken, stirring constantly so that the eggs do not stir and the sauce thickens, coating both the pasta and the meat. While the bacon is cooking, boil a large pot of water and cook until it boils over, set aside a ladle of pasta water. When the water boils, drain the pasta and cook in plenty of salted water until al dente, about 5 minutes. Add the bacon, onion, garlic, eggs, cream and cheese and toss again to a cheeky consistency of the the pasta and top with bacon before serving. While the pancakes are cooking: Cook a small saucepan over medium heat with 1 / 2 cup of olive oil and when it is cooked, add 1 tablespoon salt and 1 teaspoon garlic powder and heat until it is hot and the spaghetti is through. Once the pancetta is cooked, boil a larger saucepan over water, heat 1 tablespoon of oil in the pan over low to medium heat until it boils. Sources: 0, 9, 11
