This is a side dish, prepared with lightly cured salmon and dressed with a spicy lime dressing. It’s basically a combination of finely chopped onions and tomatoes, coriander and a little salt and sugar. Hawaiian side dishes include Lomi salmon, poke, tuna or even poke salad. Toss in a salad bowl, massage in the remaining salt-sugar mixture and place the rest of the coriander on top. Sprinkle the salmon with the remaining salt-sugar combination and sprinkle with a little more lime zest and lime juice. Sources: 0, 1, 6

Rinse the salted fish and soak in an ice bath for 1 hour or add a tray of ice cubes (Lomo – Lomo salmon is best). You will want to soak your salmon fillets in cold water for a few minutes and change the water several times. Sources: 7, 9

If you want to prepare this at home, you will have to serve it as part of your Hawaii plate for lunch, but it would be an ideal Hawaii lunch plate. Sources: 5, 6

To make Lomi – Lomi Salmon, wash the salmon and soak it in a bowl of cold water for at least 30 minutes until soft and translucent. Sources: 5

Place the salmon in a non-reactive, rimmed bowl or pan large enough to store and lay out the fillets. Make sure that the bottom of the fish is covered with salt and sugar and that all parts of the fish, including the edges, are completely covered with salt. Put the salmon in the salt layer and press into the mixture, making sure that all sides of the salmon are covered with coarse salt and completely cover with a layer of sugar. Cover with another layer of salt and place on a bowl of cold water to ensure that salt covers the bottom of all fish except sugar. Sources: 1, 7, 8

Put the remaining green onions in the bowl with the salmon and reserve a small pinch of green onions for garnish. Chop the onions finely; the pieces should be about the size of even the smallest salmon. If the onion is very bitter, soak in water for a few minutes and drain to remove the bitter juice. Sources: 2

If it is too salty, soak for a few minutes and change the water occasionally; more water will pull the salmon out and it will become salty. However, some of its flavour will be lost as it soaks; a longer period of salt will result in a saltier, more cured fish. Never mind if your salmon needs to be cured for 24 hours, as long as you cure it and soak it in water for at least an hour. Sources: 2, 7

Salmon should be dried and mixed with tomatoes and green onions; tomatoes or onions may or may not be used. I like my Lomo – Lomo, which is half salmon and half tomato and onion, although it’s mostly salmon with a little tomato or onion, because salmon is the good stuff. Sources: 2, 8

The North Shore Kauai spot even has a food truck where you can layer it into small bowls, and I ordered a Poi Bowl topped with Kaluapig and Lomo Lomo salmon at the Taro Juice Co. booth in Hanalei. Hawaiian restaurant on the mainland that you can find and cook yourself, but it seems very cool that so many Hawaiian restaurants and food trucks have opened around the world. Sources: 5, 6

One of my students chopped onions and peppers into raw food, and soon the counter was ringing with orders for the Lomo salmon salad. Setlock carefully mixed the salmon with tomatoes, chives and other vegetables and pulled it out of the fridge, where it had been chilled for about an hour before being served. I rinsed and mixed the salted salmon, diced the onions and diced them in, and then served them in a bowl to keep them cold and moist. The salmon was cured in coconut sugar with low carbohydrates and served with a dash of coconut oil and a pinch of salt and pepper. Sources: 0, 3, 4

Setlock held up a silver sheet on which was salmon meat and behaved as if it had once been firmly attached to a floating fish. Lomi lomi means “massage” in Hawaiian and is used here to refer to massaging or chopping small pieces of salmon. It refers to how the ingredients of the dish are grated, massaged or pressed directly into the diced, mashed salmon, as well as how it is cooked. Sources: 1, 3, 4

You can make a batch of homemade crackers and top them with tuna tartare, or you can make them with roasted vegetables and raw food. Simply add the diced white sweet potatoes and water and cook for about 5 minutes each side. Sources: 0, 3
