So today I want to share a recipe with you to make some of my favorite roasted catfish, one of my favorites from Big Mama. Today’s recipe is Food Fried Catfish – a southern recipe that Big Daddy handed down to me and passed on from my mum! Sources: 0, 2

Having a good pan-fried catfish recipe for your next fishing trip in the war chest, with a little preparation, makes cooking your catch right on the river’s banks a lot easier. The best way to fry is to combine a few ingredients: chicken stock, buttermilk, salt, pepper and a pinch of salt and pepper. Frying cat fish is a skill you can gradually master. Once you are ready to cook on your campsite, throw your catfish fillets into a large resealable bag with a few more cups of milk. Sources: 4, 13

Then dredge in the breadcrumbs-cornmeal mixture until evenly coated, then dip into the egg mixture, proceeding in batches, making sure that the fish is completely covered. Lift it out of the marinade, wipe it gently as far as possible, then dredge it back into breadcrumbs and cornmeal mixture to spread it evenly. Once the catfish is pickled, place on a clean baking tray and fry for about 15-20 minutes, or until the cornmeal is golden brown. Sources: 7, 9, 14, 15

Try to turn the catfish one at a time, so that the hot crisco does not cover it when frying, and avoid turning it after it is covered with it, or stirring it until it is fried. Sources: 15

When the crisco is too low to fry the catfish, add the crisps and cook two at a time until both are through, about 5 minutes. Sources: 15

Cooking time varies depending on the deep fryer used and how crispy you prefer your fish. So use your assessment of whether you need more or less fish seasoning. Note: Recipe Preparations: 1 / 4 cup olive oil, 2 tablespoons salt, 1 teaspoon pepper and 2 teaspoons garlic powder. Sources: 8

If you are frying catfish in a pan or cast iron pan at home, use peanut oil or regular vegetable oil. As I said about frying, I always use shortening or crisco to fry large quantities of fish. Sources: 9, 15

Once the oil is hot, remove the catfish fillets from the resealable bag and sprinkle into the cornflour mixture. Then I fry them in hot oil until crispy, crispy and delicious, about 3 – 4 minutes per side. Sources: 4, 15

When the catfish are done, take them out of the cast iron pan and place them on a paper towel-filled tray pan, pour the buttermilk mixture over the fish and place them in a 9 x 13 baking pan. While the oil is being heated, put the cornmeal mixture, bay leaf, salt, pepper, garlic powder, salt and pepper in a large bowl to enjoy the liquid. Sources: 5, 12, 15

To fry the fish, you have to peel them off the bone when you pull them out with a fork, but before you fry them, we want them to be flaky on the bone when we peel them off with a fork. Fry them in a deep-fat fryer or saucepan and move them a little so that they do not stick to the bottom of the pan or the top of your cast-iron pan. Sources: 11, 15

If you add too much fish at once to the oil, it lowers the temperature and the fish does not boil. If you have a catfish swimming in it, add half a centimetre of vegetable oil to the pan and turn the stove down so it heats up quickly, because if it is too cold, the four centimetres of vegetables soften the fish. I recommend a cast iron pan or Dutch oven, not a deep fryer or pan, because when you turn the cat fillets over, they splash over the pan. Do not displace your oil, otherwise you will not cook your fish, and if you have an oven in which you roast them in the oven, you will let them float after you have taken them out of the hot oil. No matter how delicious your fried catfish is, you must combine it with a side dish, preferably southern, to complement its rich flavour. You want to serve it as a savoury variant, but this is not a “savoury” dish. The fruit forms a wonderful contrast to the rich catfish dish that you will soon eat, and is the perfect accompaniment to this hearty dish. Sources: 3
