
This oven-baked meatball is one of the best things I’ve learned to make since I made meatballs with sauce. In this Swedish meatball with mac-cheese recipe, I use a cooking mix and mix in plenty of gooey cheese, which makes a meal that can be whipped up in about 30 minutes, which is a guaranteed family dinner hit. Meatballs, pasta and baked goods can be purchased, but when you go to the homemade meatballs, mix all the ingredients for meatballs together and start shaping the meatballs in an ice ball or by hand. Put the chilled meatballs in a batch and cook until they are browned and cooked through, about 3-4 minutes per side. Place the meatball back in the oven and bake for another 5-7 minutes until golden brown on all sides. Cook for another 10 minutes or until the meatballs are nicely brown and almost fried. Once the meatballs have reached the minimum temperature and the pasta timer is almost turned off, remove from the oven, drain and rinse, keeping half a cup of starchy pasta water. Put in a medium baking dish and drizzle with a simple white sauce (bought or homemade). Add the drained noodles to the sauce and stir well, then pour into the prepared baking trays. Add about half of your pasta and half of the cheese, mix them together and then add them to your sauce. Drizzle over the spaghetti, pour in, carefully combine and pour over some pasta. Place the spaghetti and meatballs in a bowl, serve with the chopped basil and the pasta. Place your family-style pasta in a large platter – a bowl – scoop the meatball over the top, then pour the sauce directly over it. Place the meatballs side by side on another plate and top with a dash of white sauce and a dollop of macaroni. Sources: 1, 4, 8
Once the meatballs are browned, add to the pan with the sauce and simmer together. When it has reduced, add the pasta and cook over medium heat until completely heated through. Once the water in the pasta is boiled, finish the spaghetti and sauce, just start to line up and hold on to the pasta well so that it thickens again, and boil it with a little more of the white sauce until it has just started to bubble, about 5 minutes longer than the original cooking time, then add the meatball and stir again. Pour the meatballs on the sauce, cover the casserole with foil and heat the olive oil in a non-sticky pan. Roll out the small meatball and add it to the pan with the pasta and sauce until it has about 2 tablespoons, about 5 minutes. Sources: 0, 3
In the same pan, add the tomatoes, garlic, spices and water and mix to combine. Add tomatoes, garlic, spice and water, stir lightly and add and cook for about 3 – 4 minutes. In the same pan, stir all the meatballs together, stirring gently, then add to the pasta and sauce and heat until all is mixed. Sources: 14
Prepare the sauce: Pour the reserved noodles over the meatballs, bring to the boil and pour over them to bring them to the boil. Bring to the boil, then toss in the sauce and meatballs and cook until the pasta is done, about 3-4 minutes, depending on the size of the pan you are using. It may be easier to put everything in a pasta pot than in a pan, but it works just as well. When the meatballs are baked in the oven, place on a baking tray and bake for 30 – 40 minutes or until golden brown. Sources: 4, 6, 10
Pre-make: You can heat the meatballs by adding them to a large, wide pan and heat them over medium heat until golden brown. Sources: 8
What you don’t want to do is make the pasta wait until the meatballs come to temperature. One thing to bear in mind with this dish: it will cause a lot of heat in the pan, so opt for a longer pasta such as fettuccine or spaghetti in smaller pieces. Sources: 8, 12
